Mandazis (Kenya)
8 cups all-purpose flour
1 cup sugar
4 tsp baking powder
1/4 tsp salt
1/4 tsp cardamom
1/8 tsp cinnamon
1/8 tsp ginger
4T vegetable oil
1/2 cup warm milk
1 egg, lightly beaten
oil for frying
Mix all dry ingredients.
Combine water, oil, milk, and egg.
Gradually add the wet ingredients to the dry ingredients while kneading the dough.
Knead until a smooth and elastic dough is formed (15 to 20 minutes).
Let dough rest for several minutes.
Divide the dough into several hand-sized pieces.
Roll or press the pieces into circles one-half inch thick.
Cut circles into quarters.
Heat a few cups of vegetable oil to 300 degrees Fahrenheit in a skillet or deep pot.
Fry the dough in the hot oil, turning a few times, until they are golden brown all over.
Fry only as many together as can float in the oil without touching one another.
Place on paper towels to drain.
Serve warm.
Chai (Kenya)
Heat in a 4-quart saucepan:
6 cups water
7 tsp leaves or 7 bags
Boil 10 minutes.
Add 6 cups milk.
Heat to near boiling. Strain leaves. Add sugar to taste.
Chai (India)
For one cup tea:
2 tea bags
2/3 cup water
1/2 cup milk
1 cardamom pod or small piece of crushed ginger
1 tsp. sugar
Put tea bags in water and let it boil vigorously for five minutes. Pour in milk and add sugar. Let it boil until milk rises. Add crushed cardamom pod or ginger. Serve hot.
